     Clam Chowder

Ingredients
1# bacon fried crisp and broken up
1 med onion pureed
1 stalk celery pureed
2 medium potatoes diced
2 cups heavy cream
1/2 tsp pepper
1 cup chicken broth
4 cans minced clams - drain and save juice
parsley flakes
 
salt to taste
paprika

Instructions
Fry bacon and set aside. Cook onion and celery in 3 Tbl bacon grease until soft. Remove from heat, add clam juice, potatoes and spices. Bring to a boil and cook until potatoes are soft. Remove from heat and stir in cream and chicken broth; add the crumbled bacon. Cook until hot - DO NOT BOIL. Add clams just before serving to heat them through. They are already cooked. Adding last keeps them from getting rubbery.
