     Lemon Icing

Ingredients
1 cup salted butter, room temperature
1/4 cup lemon juice (1 1/2 lemons)
1 Tbs. lemon zest
2 cups confectioner's sugar
 

Instructions
Combine butter and lemon juice with mixer, add lemon zest and gradually blend in confectioner's sugar.
Original recipe called for 5 cups sugar, I couldn't do it. I generally just icing the top and in between layers. I think that there was enough left over to icing the outside. Make a day ahead, they say that the lemony taste increases.
