1/4 c grapeseed oil or another high smoke point oil
3-4 cloves garlic minced
2 T dried oregano
1 lemon juiced
sea salt
black pepper
8 lamb chops
Instructions
Cut apart lamb chops and dry with paper towel. Arrange in
skillet. Top with minced garlic, oil, oregano, salt, pepper and
lemon juice. Rub into chops. Leave 30 minutes or overnight to
marinade.
Put skillet on medium high and fry with lid on 3 minutes on
each side. Do not overcook.
Let rest 3-5 minutes before serving.
