     crisp- apple butternut squash

Ingredients
2 apples, cut into chunks
2 c smalled cubed butternut squash, cut smaller than apples
1/2 c coconut sugar
2 tbs lemon juice
splash vanilla
1 tbs arrowroot flour
1/2 tsp cardamom, 1/2 tsp coriander
crumble
 
1 1/4 c oat flour, or granola
1/2 c cold vegan butter or coconut oil
1 c coconut sugar
1 1/2 tsp coriander, 1 1/2 tsp cardamom

Instructions
Preheat your oven to 350 degrees F. Mix all of your filling ingredients in a large bowl. Make sure that all of the apples and butternut squash pieces are covered in the mixture. Set aside. Add all streusel ingredients in a medium bowl. Using clean hands, pinch and mix the mixture until it's combined and crumbly. Pour your filling ingredients (liquid included) into an 8 in. square baking pan. Top with your crumble, making sure to cover the entire mixture. Bake for 30-35 minutes. You should be able to see some of the filling bubble up in the corners. Allow to cool on a cooling rack for 10-20 minutes before diving in!
