Preheat oven to 450 degrees.
In a small bowl, combine pesto, cheese, black
pepper and breadcrumbs. Eyeball enough to coat
the top of each chicken breast. Set aside.
Foil and then lightly coat baking sheet with oil.
Rub each chicken breast with some oil. Then coat
each chicken breast with just the basil pesto to
marinade. Top each chicken breast with the
breadcrumb mixture.
Bake chicken breast for 25 minutes on the middle
rack. Place a piece of foil over the chicken so
the breadcrumbs don't burn. In the last ten
minutes, discard the foil to let the breadcrumbs
brown.
