     Carrot and Parsnip Soup

Ingredients
1/4 Cup Butter
1 large onion chopped small
1 L Hot Vegetable Stock
2 Cups Sliced Carrots
2 Cups Sliced Parsnips
1 Tbsp Parsley
1 Tbsp Marjoram
1 Tbsp Thyme
Salt and Pepper to taste
 

Instructions
Melt butter in soup pot on medium heat. Add onion and cook 3 to 4 minutes.
Add vegetable stock and vegetables and bring to boil then simmer till vegetables are tender.
Using hand held food blender blend ingredients together.
Add salt and pepper to taste. Bring back to a boil and simmer on low for an hour. Top up with water occasionally.
