Melt butter in soup pot on medium heat. Add onion
and cook 3 to 4 minutes.

Add vegetable stock and vegetables and bring to
boil then simmer till vegetables are tender.

|
Using hand held food blender blend ingredients
together.
|
|
|
Add salt and pepper to taste. Bring back to a
boil and simmer on low for an hour. Top up with
water occasionally.
