     Chef Albee's Potatoes-Onions-Eggs, Mixed Brunch

Ingredients
2- Med. Potatoes
1- Lg. Sweet Onion
4- Eggs
 

Instructions
Cut potatoes into slanted chips. Fry in oil @ 350deg. until browned.
Slice onion and fry until browned. Pour off excess oil.
Whip Eggs in a bowl. Lower heat in large skillet and mix in eggs until scrambled the way you like.
