     Chicken Wild Rice Soup

Ingredients
1-32 oz. box chicken broth
1 1/2 c. cooked, cube chicken
1- 4.3 oz. pkg of Rice-A-Roni Long Grain & Wild Rice mix
2 c. water
2 tbsp. olive oil
1 c. chopped celery
1 c. diced carrots
1 c. diced mushrooms
3/4 (6 tbsp.) stick of butter
 
3/4 c. flour
2 c. half and half

Instructions
In a skillet, cook chicken cubes.
In a dutch pot heat oil. Saute celery, carrots, and mushrooms until slightly tender. Add broth, chicken, water, and rice without seasoning. Bring to a boil, then reduce to simmer until rice is tender, about 20 minutes.
In a bowl, whisk flour in half and half. In a saucepan over medium heat, melt butter and stir in seasoning packet.
Fold cream mixture and seasoning mixture into dutch pot. Stir and simmer until soup starts to thicken.
Serving Suggestions
Very good! A lot like Copps chicken rice soup.
