Preheat over to 350 degrees F.
In a large bowl, put in the pumpkin, eggs and sugar or maple syrup and mix. Add the spices and mix some more. Add in the milk until you get a mixture that is not too thick nor runny. A nice medium consistency.
Put crusts into two 9 inch pie baking dishes or use store bought it depends on time. Divide equally between the two dishes the pumpkin mixture.
Bake at 350 degrees for about 45 to 50 minutes or until the center of the pie is done. Cool on wire racks completely then wrap and place in refrigerator until ready to eat.
