     Crunchy Chicken

Ingredients
6 large skinless, boneless chicken breast halves
1 1/2 cups flour
1 tbsp chicken seasoning
6 eggs
2 tbsp water or milk
4 cups cornflakes, crushed
1/2 cup dry bread crumbs
1 chicken coating packet (Shake and Bake original flavor)
3 tbsp vegetable oil
 

Instructions
Preheat oven to 350 degrees. Set out three bowls or loaf pans for dredging chicken. In first bowl combine flour and chicken seasoning. In second bowl, beat eggs with water. In third bowl combine cornflakes crumbs, bread crumbs, and packet of chicken coating.
Pour 2 tbsp of the oil into. Spread oil around. Dredge chicken in the following manner: First coat chicken breast in flour mixture. Dip in egg mixture, roll chicken breast in cornflake mixture to coat. Place coated chicken breast into oiled pan. Repeat for each chicken breast.
Bake for 30 minutes or until top of coated chicken is browned. Turn chicken breasts in pan, spoon 1 tbsp oil evenly between breasts, if the pan is dry. Bake for an additional 10 minutes or until coating is browned.
