4 Tb buter
1 tb oil
1/2 of an onion, chopped
1 lb of cremini or button mushroom (whole)
2 Tb dry white wine (Pinot Gris, Chardonnay or Sauv Blanc (or 2 Tb chicken broth)
1 ts fresh thyme leaves, chopped
2 tb chopped fresh parsley, chopped
4 cloves of garlic, minced
salt and pepper, to taste

Heat butter and oil in a large skillet on medium high heat. Saute onion until softened. Add mushrooms and cook until golden and crispy on edges.
Pour in wine or chicken broth and reduce slightly. Stir in herbs and garlic and stir until fragrant. Season with salt and pepper to taste.
