Heat Oil to 260 degrees.
Mix water, butter, salt, and sugar4 in a saucepan and bring to a gentle boi on medium
heat.
Turn heat to low and add Flour, blend until smooth.
Transfer mixture to a large bowl and let cool approx. 5 minutes to rest dough and cool.
Add vanilla, blend.
Add egg and blend until smooth.
Add mixture to a piping bag with a large 1/2 star tip.
Pipe into heated oil and cut with scissors at 6 inches.
Cook approx 2 minutes on each side put on a rack with paper towels to cool until warm
(15 seconds).
Coat with cinnamon sugar mix.
Best served warm. Can be frozen and reheated.
