3 cups old fashioned or quick Quaker Oats
|
|
1 cup rice flour
|
|
1 cup Splenda (or Monk Fruit, 1-1 ratio)
|

1/2 Splenda brown sugar, tightly packed
|
|
1/4 tsp imitation salt
|
|
1 tsp cinnamon
|
|
1 tsp baking soda
|
|
1/4 tsp nutmeg
|
|
1 cup applesauce
|
|
|
|
1 eggs (2/3 cup yellow eggbeaters)
|
|
1 tsp vanilla
|
|
1 cup raisins
|
|
1 diced, unpeeled Gala apple
|
|
1 cup Craisins
|
|
1 cup slivered almonds (optional)

Instructions |
|
|
Combine dry ingredients thoroughly. Add in the eggs, applesauce,
raisins, craisins, nuts and vanilla. Stir until well mixed.

Spray cooking sheet lightly with Pam and spoon on 1 Tbs of batter for
each cookie. Not a lot of space is needed between cookies. They do not
spread.

|
Makes approximately 64 cookies.
|
|
|
Bake at 350 degrees for 15 minutes until golden brown. Cool one minute.
Put on cooling rack.
