     OATMEAL COOKIES

Ingredients
3 cups old fashioned or quick Quaker Oats
1 cup rice flour
1 cup Splenda (or Monk Fruit, 1-1 ratio)
1/2 Splenda brown sugar, tightly packed
1/4 tsp imitation salt
1 tsp cinnamon
1 tsp baking soda
1/4 tsp nutmeg
1 cup applesauce
 
1 eggs (2/3 cup yellow eggbeaters)
1 tsp vanilla
1 cup raisins
1 diced, unpeeled Gala apple
1 cup Craisins
1 cup slivered almonds (optional)

Instructions
Combine dry ingredients thoroughly. Add in the eggs, applesauce, raisins, craisins, nuts and vanilla. Stir until well mixed.
Spray cooking sheet lightly with Pam and spoon on 1 Tbs of batter for each cookie. Not a lot of space is needed between cookies. They do not spread.
Makes approximately 64 cookies.
Bake at 350 degrees for 15 minutes until golden brown. Cool one minute. Put on cooling rack.
