     NANCY'S RICE FLOUR PIE CRUST

Ingredients
3/4 cup rice flour
1/4 tsp baking powder
1 Tbs Splenda
Pinch of imitation salt
1/3 cup eggbeaters
1/4 cup applesauce
 

Instructions
Spray muffin pan w2ith Pam. Mix well. Dough will be sticky. Add a little more flour and pat into muffin pan (can use muffin cups in the pan). About a large-sized marble of dough will fill the cup thinly, bottom, and sides.
Serving size will be 1/3 cup of pumpkin mix in each muffin. Bake 30-35 minutes at 350 degrees.
