     MASHED POTATOES

Ingredients
4 russet potatoes
1/4-1/2 cup chicken broth (sodium free)
Black pepper, freshly ground
 

Instructions
Wash potatoes well. Prick skins with fork and place in oven directly on rack. Bake for 1 hour at 400 degrees or until potatoes are soft throughout.
Slice potatoes in half and scoop out. Whip potatoes using an electric mixer or potato masher to desired consistency, adding chicken broth and pepper as desired.
Optional- Garlic roasted potatoes. Wrap 1 garlic clove per potato in foil and roast with potatoes. Peel garlic and mash in with potatoes.
