Eyeball some EVOO in the bottom of a large saute pan (or any large pot)-heat to medium. Sweat the onions until clear - add ground meat and cook. Have another pan on high to boil water for the macaroni.
Add the tomato soup to mixture and add one can of water (if using the two small cans - two cans of water). Add pepper to your personal liking. bring to a simmering boil. Cook macaroni in the other pan. Add parm cheese to the mixture (one or two handfuls) and stir well. Cook down on medium low or medium.
Drain the cooked macaroni and add to the mixture - mix well. Take off the heat and place on cool burner and let rest for about 15-20 minutes. It will grow and absorb the liquid. Add some more parm cheese and stir.
Plate up and just one more time..sprinkle some parm cheese! -) This makes a lot of chop suey and great for leftovers and lunch to go!
