     Sweet Italian Sausage (2)

Ingredients
3 lbs ground pork (I use pork loin)
3 tbsp red wine vinegar
1 tbsp salt
1 tbsp cracked black pepper
1 1/4 tbsp dried parsley
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp dried basil
2 tsp paprika
 
2 tsp crushed red pepper flakes (or to taste)
3/4 tsp ground fennel
1/4 tsp brown sugar (I used a dose of maple syrup)
1/8 tsp dried oregano
1/8 tsp dried thyme

Instructions
Mix all ingredients. Get your hands in there to be sure the mixture is homogeneous. Take a small portion and fry/taste. Adjust your hot spices (particularly the red pepper flakes) upward if you want more punch.
