In a large saucepan, melt the butter over medium
heat. Dont allow to brown. Add the flour, cook,
stiring for 3 minutes.
Add onions and salt, cook for 2 minutes.
Add broth and bring to a simmer, stiring
occasionally to prevent the flour from sticking on
the bottom.
Once broth has reached a simmer, add the celery
and cook until tender. 15 to 20 minutes.
Puree soup in blender about 3 to 4 minutes until
smooth. You may need to do this in small batches.
Return soup to pan, add milk and heat through.
