1 pound shrimp, peeled and deveined
1 tsp extra virgin olive oil
kosher salt
fresh black pepper
1/4 red onion, thinly chopped
1 stalk celery, thinly chopped
2 tbl dill
For Dressing-
1/2 cup mayo
juice and zest of 1 lemon
1 tsp dijon mustard

Preheat oven to 400 degrees. On a baking sheet, toss shrimp with oil and season with salt and pepper. Bake until shrimp are completely opaque, 5 to 7 mins.
In a large bowl, whisk together mayo, lemon juice and zest, and dijon mustard and season with salt and pepper. Add cooked shrimp, red onion, celery and dill to bowl and toss until combined.
Serving Suggestions
serve over lettuce or on bread.
