Lightly dust raisins with flour.
Sift dry ingredients into a large bowl.
Add coconut, carrots, fruits and nuts, and stir well.
Add eggs, oil and vanilla, stirring only until combined.
Spoon batter into lined muffin tins and bake at 375° for 20
minutes.
Muffins should sit 24 hours before serving.
