     Morning Glory muffins

Ingredients
2 1/2 cup sugar
4 cups flour
4 tsps Cinnamon
4 tsps baking soda
1tsp salt
1 cup raisins
1 cup shredded coconut
4 cups shredded carrots
2 apples, peeled and shredded
 
1 cup chopped pecans
6 eggs
2 cups vegetable oil
2 tsps vanilla

Instructions
Lightly dust raisins with flour. Sift dry ingredients into a large bowl. Add coconut, carrots, fruits and nuts, and stir well. Add eggs, oil and vanilla, stirring only until combined.
Spoon batter into lined muffin tins and bake at 375° for 20 minutes. Muffins should sit 24 hours before serving.
