     Italian Sausage Soup

Ingredients
1 lb. Italian Sausage
1 large onion, chopped
2 medium carrots, chopped
2 stalk celery, chopped
8 cups chicken broth
1 14.5 oz. Can diced tomatoes
1 8 oz. can tomato sauce
2 can great northern beans, drained and rinsed
1 tsp. Oregano
 
1/2 tsp. Rosemary, crushed
1/2 tsp. Basil
1/2 tsp. Thyme
1/4 tsp. Fennel seeds
2-3 cloves garlic, minced
1/2 cup shredded Parmesan cheese
2 cups, packed fresh spinach leaves

Instructions
In a 6 qt. Dutch oven, cook Sausage, onion, carrots and celery over medium heat until Sausage is no longer pink. Add chicken broth, undrained tomatoes, tomato sauce beans and spices. Bring to a boil, reduce heat, cover and simmer 1 hour.
Add Parmesan cheese and spinach. .turn off heat, cover for 5 minutes. Salt and pepper to taste. If using boullion cubes for broth, it should be just about right for salt, make sure to taste test before adding more salt.
