Preheat oven to 450 degrees.
Wash and dry all produce. Medium dice potatoes
into 1/2 inch cubes. Toss potatoes with oil, salt
and pepper on a baking sheet. Do not use foil
since potato will stick to foil and tear. Roast
for 20 minutes.
Toss potatoes, then sprinkle with Parmesan cheese.
Return to oven to lightly brown cheese. Garnish with
parsley.
