     Pork Tenderloin with Plantains & Corn, Black Bean

Ingredients
1 each plantain cut 24 slices
1 each pork tenderloin
1/2 cup roasted corn
1/2 cup black bean
2 each green onion
1/2 each red pepper
1/4 cup chopped cilantro
2 each jalapeno
tt jalapeno juice
 
tt lime juice
2 tbs. honey

Instructions
Clean pork tenderloin and rub with jerk seasoning over night Roast off corn in oven or on grill that has been seasoned with salt, pepper, cumin, olive oil Drain black bean Chop and all green onion, red pepper, jalapeno, little rice vinegar, cilantro mix with the corn and black bean Sear and roast the pork tenderloin until 145 to 150 degree, remove and rest Pan fry sliced plantains
To assemble lay down plantains top with sliced pork tenderloin, relish & drizzle over pepper honey glaze
