Roll out first crust and line pie plate. Set in refrigerator along with extra dough.
Place sliced apples in large bowl. Combine sugar, cinnamon and sprinkle over apples. Carefully stir to coat all apple slices. Arrange apple slices in pie crust. Dot with butter on the top of apples.
Roll out second pie crust and carefully add to pie. Seal edges. Make slits in top of pie crust. Refrigerate pie crust 20 minutes.
Bake in preheated 350 degree oven for 40-60 minutes.
