     Banana Bread

Ingredients
Recipe can be halved or quartered,
1/4 cup white sugar mixed with 1 tsp cinnamon for pans
3/4 cup butter
3 cups white sugar
3 eggs
6 very ripe bananas, mashed
16 oz sour cream
2 tsp vanilla extract
2 tsp cinnamon
 
1/2 tsp salt
3 Tbs baking soda
4 1/3 cups King Arthur Measure for Measure GF Flour
Can substitute all purpose white (wheat) flour if GF is not desired
Pecans or Walnuts, as desired (optional) up to 1 cup.

Instructions
Preheat oven to 300. Grease 4 loaf pans and sprinkle with cinnamon sugar mixture
In a large mixing bowl, cream butter and sugar. mix in eggs, mashed bananas and sour cream, vanilla and cinnamon. Mix in salt and flour. Stir in nuts (optional). Pour into prepared pans.
For muffins, bake 35-40 minutes, for loaves bake 60-70 minutes. Test with toothpick.
If you're unfamiliar with gluten free flours try not to substitute the King Arthur Measure for Measure, available at Amazon. This is the best GF flour I've ever used and I've tried quite a few, I also eat wheat products and will say it has no odd taste whatsoever
