     Cauliflower Breakfast Skillet

Ingredients
1 package frozen chopped onions (8 oz)
1 package Jones Light Breakfast Sausage and Rice Links
12 oz Cauliflower florets fresh or thawed if frozen
1 tsp Italian Seasonings
6 Large Brown Eggs
1/4 cup Cashew Milk
6 oz Fat free Shredded Cheddar
1/4 cup Fat Free Shredded Mozzarella
1 tbsp olive oil
 

Instructions
-YOU MUST HAVE AN OVEN SAFE SKILLET- Preheat Oven to 350F Cook Breakfast Sausage according to package. Grind breakfast sausage up in a food processor
Heat Olive oil in a large skillet and add cauliflower and onion. Saute until cauliflower is starts to soften and onion is translucent. Season with Italian Seasoning.
Sprinkle half the cheddar over the skillet. Sprinkle the mozzarella over skillet. In large bowl, whisk together eggs and milk; pour into skillet. Give mixture a gentle stir.
Top with remaining cheese Bake in oven for 35-40 minutes - until eggs are set.
