I have found it easiest to combine all ingredients into a large
roast pan and cook x 3 hours on 300 degrees in the oven with the lid
on and then another 2 hours with the lid off. In between skim of the
fat layer. Stir a few times through the cooking period. ADD more
chili peppers if not enough heat. Also note if it cooks down too
much just add another jar of homemade tomatoes if you have, or a
couple of cups of water.

1. Fry the ribs in extra virgin olive oil, just until brown, remove
and fry the onions briefly
2. In the meantime add all other ingredients to a large roast pan, or
if you using the stove a good size, good quality stockpot.

3. Add the ribs and onions. Rinse the Frying pan with water and add
to roast pan.
4. Add one large tomato juice can of water

As it simmers down you may want to add another 1/2 can of water , or
at the end if it is too thick.
Note if you are using homemade tomato sauce you need 500ml.
Note- you can also use frozen tomatoes if you have them .Just add
them to the roast pan frozen. They will break down and get soft
during the cooking process.
Variations- Add basil or basil instead of oregano
Getting the sauce to your likely may take a few tries but you can't
really mess up spaghetti sauce -)
