2 c warm water
1 tbs active dry yeast
1/3 c honey
2 c whole wheat flour
1 tsp pink himalayan sea salt
1/3 c evoo
5 c all purpose unbleached flour

Preheat oven for 375F in a large bowl, mix warm water, yeast and honey. Add whole wheat flour, salt, and evoo. Gradually add in the all purpose until not sticky. Turn dough onto a lightly floured surface for 10-15 minutes. When dough is smooth and elastic, put into a lightly oiled bowl (turn dough in oil) and cover with a damp cloth for 40 minutes in a warm place. Roll out dough again and punch down and cut into 2 equal parts. Shape the dough into loaves and place into lightly greased 9 x 5 inch loaf pans. Allow the dough to rise in the pan and cover with a damp cloth for 30 minutes. Bake for 25 minutes. When done lightly brush with butter or oil and allow bread to cool and eat after 24 hours when yeast has died.
