Tear cheese into small pieces.

Melt butter in saucepan on low heat, add cheese
and stir to coat. Add milk in batches, stirring
constantly.

|
Bring to simmer, then back to low. Stir constantly
until cheese is melted and remove from heat. You
may have to occasionally lift the pan from the
burner. It will thicken some upon standing.

|
|
Milk can be substituted with heavy cream or
condensed milk. This sauce is very rich, and quick
and simple to make if Basic Cheese Sauce (see
recipe) is not an option.

Serve over potatoes, veggies, etc or add a spoonful to hamburgers, hot dogs, etc.
