     Buttery Lentils with Shallots

Servings   4 1/2 cup each

2/3 cup dried lentils
1 TBsp butter
1/2 cup chopped shallots
2 TBsp chopped fresh parsley
1 tsp chopped fresh thyme
1/4 tsp salt
1/4 tsp peper

Cook lentils, drain. Melt butter in skillet, saute shallots 2 minutes. Add lentils, etc, toss, serve
4 1/2 cup servings 23 g carbs each serving
