Cut Chicken into strips and with oil, herbs, salt, pepper in bowl. Saute chicken but make sure enough oil and browned bits on bottom. Remove chicken from pan.
Add 2 tbsp of oil then saute mushrooms. Slice peppers and onions. Remove mushrooms from pan
Add sliced vegetables. Mix broth and wine with xantham gum then add to veggies to reduce. Add back chicken and mushrooms.
Saute with preferred pasta.
