Put cauliflower florets in a food processor and blend until they break
apart into fine pieces.
Put rice in a large saucepan and cover with water. Bring to a boil over
and then simmer on medium x 5 minutes.
Drain and get as much water out of the rice as possible.
Transfer to large bowel and refrigerate until cool
Once cool add all the remaining ingredients to the cauliflower rice.
Toss to coat .
