     Shortbread apple pie bars

1-1/2 sticks butter, divided, softened
1-1/2 c flour
1/4 c sugar
1 tsp vanilla
1/4 tsp salt
2 granny Smith apples, peeled,cored and chopped
2 Tbsp cornstarch
1 tsp cinnamon
1/4 tsp nutmeg
1/3 c flour
1/2 c quick oats
1/4 c brown sugar

Heat oven to 350 degrees. Line an 8X8 pan with aluminum foil and coat with cooking spray.
In medium bowl combine 1 stick butter, 1-1/2 c flour, 1/4 c sugar, vanilla and salt. Press into bottom of foil lined baking pan. Bake 10 minutes.
Meanwhile, in same bowl, combine apple chunks, cornstarch, 2 Tbsp sugar, Cinnamon, and nutmeg. Mix well. After removing shortbread from oven, spread apple mixture evenly over baked shortbread.
In small bowl, combine 1/3 c flour, quick oats, brown and 1/2 stick butter. This mixture will be crumbly. Cover apples with the crumbles. Place back into oven and bake 30 minutes more.
