     Teryaki Chicken

1 1/4 boneless skinless chicken thighs
1 tbsp olive oil
1/4 cup gf soy sauce
1/4 cup water
2 Tbsp honey
1 1/2 Tbsp brown sugar
1 Tbsp rice vinegar
1/4 tsp sesame oil
2 tsp fresh ginger (or 1/4 tsp ground)
2 cloves fresh garlic (1/2 tsp minced)
2 tsp cornstarch

Fry chicken in the oil until cooked through. While cooking chicken, whisk the rest of ingredients in a bowl until smooth. Coat chicken with sauce when done cooking and cook one minute longer.
Serve with rice and vegetables
