     Velvet Consomme

Ingredients
4 Tbsp unsalted butter
4 Tbsp flour
3 cups chicken broth
1 cup heavy cream
1/3 cup dry sherry
Salt and pepper, to taste
Croutons
Chives, finely diced
 

Instructions
Melt butter in a large saucepan over medium heat; add flour and cook for a minute or two. Pour in chicken broth and bring to a boil; simmer over low heat for 8 to 10 minutes. Tip- Make sure starch comes to a simmer (full thickening power) before adding acidic ingredients; acidic ingredients stop the thickening process.
Add the cream and bring back to a simmer. Add the dry sherry and season to taste with salt and pepper. Serve topped with homemade croutons and chives.
