     Chicken - Chicken Marbella

1/2 Cup Olive Oil
1/2 Cup red wine vinegar
1/2 Cup pitted spanish green olives
1/2 Cup capers, with a bit of juice
6 Bay leaves
1 head garlic, minced
1/4 Cup dried oregano
Kosher salt and black pepper
10 lbs quarteered chicken pieces
1 Cup packed brown sugar
1 Cup dry white wine
1/4 Cup flat-leafed parsley or cilantro, finely chopped

In a large bowl, combine olive oil, vinegar, olives, capers, bay leaf, garlic, oregano and hefty pinch of salt and pepper. add the chicken and stir to coat. Cover the bowl and refrigerate overnight.
When ready to bake, Heat oven to 350 deg. Arrange chicken in a single layer in shallow baking pan. Spoon marinade over the chicken. Sprinkle with brown sugar and pour wine around pieces.
Bake, basting frequently, until the thighs reach 170 deg., and breasts reach 160 deg. About one hour. With slotted spoon, transfer to a serving platter. moisten with a few drops of pan juice, and sprinkle with parsley or cilantro.
NOTE- I only made 4 pieces of chicken, so I cut the marinade in half. It was very flavorful. One hour was a good time, the chicken was done.
