With a peeler, shave carrots into long strips.
Heat a drizzle of oil in a large pan over
medium-high heat. Add zucchini and cook, until
browned and tender, 5-7 minutes. Add carrot
ribbons and toss to combine. Cook, stirring,
until slightly softened, 3-4 minutes. Season
with salt and pepper. Remove veggies from pan
and set aside.
Heat another drizzle of oil in same pan over
medium-high heat. Add pork, ginger, and garlic.
Cook, breaking up meat into pieces, until pork
is browned and cooked through, 4-6 minutes. Add
sweet soy glaze, stir to combine, then add
sesame oil. Cook, stirring, until sauce has
thickened, 1-2 minutes. Season with salt and
pepper.
In another pan, make sunny side up eggs. Season
with salt and pepper. Fluff rice. Add to bowl
and top with ground pork on one side and veggies
on the other. Add egg on top.
