     Borekas (Rosa Mez)

Ingredients
1 c water
dash salt
1 T butter
1 c mashed potato buds
1 beaten egg
1 c. grated parmesan
1/2 c grated romano
1/2 c feta
1 c oil
 
2/3 c. ice water
dash salt
pinch baking soda (optional)
3 1/2 c. flour (probably lot less)

Instructions
Boil water, salt and 1 T butter. Take off heat stir quickly with mashed potatoes, add egg quickly, then all cheese. Set aside.
To oil and water add salt and soda then add flour, one cup at a time until soft consistency. (mix master works fine). Limit handling. Separate into 3 balls and roll out kind of thin. Used 2 3/8 inch circle (glass) for appetizer size. Fill each and form triangle. Dough stretches. Egg wash with grated parmesan. Bake 350 30-40 min. We doubled the recipe and made about 6 dozen plus 2 dozen rollies. Can freeze baked or not.
