Preheat oven to 350. In bowl of electric mixer,
cream together butter, sugar, at medium speed.
Add eggs and beat well. Add Ricotta cheese and
mix until smooth and fully incorporated. Add
vanilla and orange zest, blend well.
In separate medium bowl, whisk together flour,
baking powder, baking soda, and salt. Gradually
add to the wet ingredients, one cup at a time on
low speed until a dough is formed.
Drop dough by heaping tablespoons onto an
ungreased baking sheet. They will puff up while
baking. Bake 10 to 12 minutes or until cookies
start to get lightly gold around the bottom
edges.
Remove from oven and cool on rack completely
before putting on glaze. Spoon glaze onto
cookies, add sprinkles before glaze dries and
allow to fully set before storing.
