     Chicken Thighs with Roasted Apples

Ingredients
1 1/2 pounds chopped, peeled braeburn apples, 5 cups
1 tsp chopped fresh sage
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
4 garlic cloves, chopped
1/2 tsp salt, divided
cooking spray
8 chicken thighs, boneless and skinless
1/4 tsp black pepper
 
chopped parsley

Instructions
Preheat oven to 475. Coat large jelly roll pan with cooking spray.
Combine first 5 ingredients. Add 1/4 tsp salt; toss to coat apples well. Spread apple mixture on jelly pan.
Sprinkle chicken with 1/4 tsp salt and pepper. Arrange on top of apple mixture. Bake 25 minutes or until chicken is done and apple is tender. Remove chicken from pan; keep warm.
Partially mash apple mixture with a potato masher, and serve with chicken. Sprinkle with parsley if desired.
