2 pounds sweet potatoes, peeled, cut into 1 inch pieces

1/2 tsp coarse sea salt
|

2 Tbsp vegetable oil
|
|
1/4 tsp ground black pepper
|

1/4 cup maple syrup
|

1/4 cup pecan pieces
|

Instructions |

|
Preheat oven to 425. Coat 9 x 13 baking pan with
cooking spray.
|
|
|
Mix all ingredients together in a separate bowl,
except for pecans. Arrange mixture in baking
pan.

|
Bake 25 to 30 minutes, stirring halfway through.
|
|
|
Remove from oven and sprinkle wit pecan pieces.
Finish with a pinch of sea salt and serve.
