Clean beets, cut stems leaving about an inch, boil
until cooked. Remove from heat and put in cold
water. When cool enough to touch, slip skins off.
Cut beets into whatever shape you like. Put beets
in jars.

Put water, sugar, and vinegar in pan with
pickling spice wrapped in cheesecloth. Bring
to a boil and make sure sugar is completely
dissolved. Remove from heat, remove and
discard pickling spice packet. Pour liquid
over beets in jars. Seal jars and process in
boiling water bath for 10 minutes.
