All oil to the inner pot. Press the saute button
and heat oil 2 minutes. Place chicken thighs in
the inner pot and brown 2 minutes per side.
Remove and set aside.
Add onion to the pot and saute 2 minutes. Add
garlic and saute another 30 seconds. Add lemon
juice and zest, Italian seasoning. Scrape up an
brown bits from the bottom of the pot. Press the
cancel button.
Put the chicken back in the pot along with the
stock. Secure the lid. Press Pressure Cook and
adjust time to 7 minutes.
When the timer beeps, let pressure release
naturally until the float valve drops; then
unlock the lid. Remove the chicken and stir in
the arrowroot powder. When sauce is thickened,
serve on top of the chicken thighs.
