     Spiced mexican Squash Stew

Ingredients
1.5 Tbl olive oil
2 c chopped onions
6 minced garlic cloves
5- c butternut squash, peeled and diced
3 C water
1/2 small fresh chili minced
1/2 tsp ground cinnamon
2 tsp ground cumin
2 c chopped tomatoes
 
2 c red or green bell peppers
2 c corn kernels
salt and pepper to taste
toppings - shredded cheese, yogurt

Instructions
Cook onions and garlic in oil on medium 10 min. Add to the onions- squash, water, chile, cinnamon, cumin. Simmer 10 minutes. Add tomatoes, peppers. Cook 15-20 minutes until all veggies are tender. Stir in corn, simmer, add salt and pepper to taste. Serve with cheese and yogurt
