     Seafood - Mexican Style Fish Fillets

Ingredients
1 lb. fresh fish fillet
cooking spray
1/2 Cup Salsa
1/2 Tsp. black pepper
2 Tbl. Mayonnaise
1 tsp. lime juice
1.2 Cup Monterrey Pepper Jack Shredded cheese
 

Instructions
Coat fish with cooking spray and place in baking dish. Mix remaining ingredients together in bowl. Spread evenly over the fish.
Bake at 400 deg. for 10 to 12 minutes to a minimum internal temperature of 145 deg. Fish should flake easily with a fork.
Very flavorful. No tartar needed. Mike liked this more than me, but it was pretty good.
