     GF Chicke Pot Pie

Ingredients
2 Tbs butter
2 medium onions chopped
1 bunch fresh carrots ( about 12) sliced into circles
1 lb chicken breasts cut up
1 3/4 cups GF Chicken Stock
1 Tsp salt, pepper and Garlic
1 can sweet peas
1 large baking potato chopped
4 ears of fresh corn cut off the cob
 
1 Cup milk
4 Tbs cornstarch
1 Tsp dried Thyme
Topping
3/4 cup Bisquick Gluten Free Pancake Batter
1/2 cup Milk
1 egg
2 Tbs melted butter
1/2 cup chopped parsley

Instructions
Heat oven to 350 degrees. In large cast iron skillet brown chicken until almost done, remove chicken and melt butter and saute onions until soft.
Stir in all vegetables, chicken, chicken stock, salt, pepper, garlic and thyme. Boil with lid on for about 20 minutes. In a separate bowl, mix 1 cup milk with 4 Tbs of cornstarch. Whisk until smooth. Stir into chicken mixture until it boils. Pour mixture into 2 un-greased 2 - 3 qt casserole dishes.
In a small bowl, stir all topping ingredients except parsley with fork until blended. Drop topping mixture by small spoonfuls over chicken mixture and sprinkle top with parsley.
Bake for 30 - 45 minutes until topping is browned.
