2 eggs

1T vegetable oil

2 cups plain bread crumbs

1lb chicken breast
|

2T salt

1t pepper

2 cups oil for frying

Instructions |

|
Flour in bowl, Eggs and oil in another bowl, bread
crumbs in third bowl.

|
Pound chicken to 1/4 inch. Salt and pepper.
Dredge in flour, coat with egg, breadcrumbs. Let
coating dry 5 minutes.
|

2 cups oil in pan. Heat to 350. 2-3 cutlets at a
time, shake pot so oil goes over cutlet. 1-1 1/2
minutes per side
