     Carrot Bread

Ingredients
3 Cups Four
1 tsp. baking soda
1 tsp cinnamon
2 Cups Sugar
3/4 tsp salt
1 Cup chopped walnuts/ or pecans
3 Large eggs, lightly beaten
2 Cups grated carrots
1 Cup vegetable oil
 
1 8oz crushed pineapple (drained)
2 Tsp. vinilla

Instructions
Combine first 6 Ingredients and stirring well.
In a separate bowl combine eggs and remaining 4 ingredients.
Add to the the flour Mixture. Stir just until dry ingredient is moistened
Spoon butter into 2 greased loaf pans, bake @350 for 1 hr. Cool in pans (about 10 mins) then remove and cool on rack.
Serving Suggestions
Can also make this sugar free by using Splenda.
