     Crab stuffed sole w/ lemon cream sauce

Ingredients
4 fresh sole fillets
olive oil, salt and pepper
1 can jumbo crab meat
1 egg
1/2 C mayonnaise
1/2 C bread crumbs
3 tsp fresh lemon juice
2 tbl fresh chopped parsley
salt and pepper
 
2 tbl butter
1 shallot chopped
1 C heavy cream
juice of 3 lemons
3 tbl honey
salt and pepper

Instructions
Heat oven to 350...Season fillets with salt and pepper, spray with olive oil Mix crab,egg, salt,pepper, lemon,mayonnaise,bread crumbs and parsley. Let rest 5 minutes. Lay fillets flat and put a large amount of filling in center. Roll and place seam side down into greased baking dish. Bake about 25 minutes. Top and with lemon cream sauce and serve extra on side.
Lemon cream sauce. Melt butter and add shallots until soft, remove shallots and add heavy cream and cook on low until it reduces by half and coats the back of a spoon. Add lemon and honey, cook 5 minutes Season with salt and pepper
