Preheat oven to 400 degrees. Line a baking sheet
with parchment paper or non-stick foil.

If your asparagus is thick blanch them in a large pan
of salted water for 1 min. , remove and refresh in ice
water or microwave on a plate for 90 seconds. If your
asparagus is thin you are good to go as is. Divide
your bunch of asparagus in half and arrange them on
the baking sheet where the cut ends are touching in
the center. Set aside.

In a medium sauce pan, melt the butter over medium
heat. Add the flour and wisk, stirring constantly for 1-
2 Mins until lightly golden. Remove the pan from the
heat and gradually whisk in the milk to form a smooth
sauce. Return to the heat, stir and simmer for 2-3
mins until thick.

Remove from the heat and beat in the egg yolk,
mustard, whorstershaire sauce and salt. taste and
add more salt and needed. season with freshly
ground pepper. Poor the sauce over the middle of the
asparagus. Top with graded cheese. Bake at 400 for
8-10 mins finishing it off by putting it on broil until the
sauce is bubbly and golden. (for best result serve
immediately)
